Working Method

Mixing Time	5 minutes slow, then 4 minutes fast.
Dough Temperature	26°C
Bulk Fermentation	30 minutes
Scale	For each flower ( 40g x4 80g x 1 & 20g x1 )
Intermediate Proof	20 minutes.
Make-Up	Roll out 80g round until 2cm thick brush outside with olive oil, place 4 rounds on the dough. Fold in the four corners. Roll 20g in poppy seeds and then place in the middle. Place upside down on the couche.
Final Fermentation	60 minutes +- 28°C and 80% R.H.
Decoration before baking	Dust with flour and score
Baking Time	210°C for 20-25 minutes.
