Working Method

  1. Bring 2 L of water to boil, once boiling add Tapioca pearls and cook till they have a clear appearance (approximately 20 minutes)
  2. Strain using a sieve
  3. Pour cooked pearls into a bowl, add sugar and the first amount of coconut cream
  4. Cover and rest overnight in the fridge

  1. Add second amount of coconut cream to achieve desired consistency
  2. Pipe Topfil into small cups (approx 15g)
  3. Pipe Tapioca pudding on top (approx 60g), squeezing the nozzle into the Topfil

  1. Roast Coconut chips, let cool and place on top
