Sweet Potato and Cumin Bun

Mixing Time	8 minutes slow, then 4 minutes fast. Add roasted potato on second speed.
Dough Temperature	26°C
Bulk Fermentation	30 minutes
Scale	900g for 30g rolls
Intermediate Proof	10 minutes
Make-Up	Place two pieces of the rolls into the mould.
Final Fermentation	120 minutes in the proof box at 30-32°C, 82% R.H.
Decoration before baking	Add sunset glaze and sesame seeds.
Baking Time	Bake at 230°C for 10 minutes.
